I have read that native people first leave the tubers out to freeze on frosty nights to improve the flavor, and then boil them in a stew.

I pity anyone who tries to eat it though; unlike Oxalis tuberous [also perennial here, but needing a good year to make a crop of tubers] I can not find a way to make it palatable. The Oxalis are like new potatoes, the Tropaeolum just unpleasant!

Tropaeolum tricolor just about survives outside, but as a winter green it is blown to bits in the winter winds. Under unheated cover is covers a 4ft support with vigour. It makes a 'pot full' of bulbs from just a few in one year, but here it doesn't go dormant with summer heat until July. Even in July we are not getting many days over 21C though.
